Also, UNO Mas has a new chef, Roberto Gonzalez Alonso, who worked at several renowned establishments such as El Puerto in Bristol, El Cambio de Tercio in Chelsea, Sinsombrero, Casa Gades, Sexto, Txirimiri and the three Michelin star restaurant, Diverxo in Madrid. Roberto’s passion for traditional and contemporary Spanish cuisine allows him to bring a new wave of specialities to UNO MAS, elevating the menu to new heights.

I begin my grazing at the most obvious of places: oysters and caviar. Molluscs Cape Horn, Tsarkaya and Lambert from the southernmost tip of South America, the Baltic Sea and the Pacific Northwest, respectively, have my complete attention. All they need is a twist of lemon to bring out their briny, crisp, and refreshing taste. The caviar plays the interlude (I forgo the blinis – who needs carbs) as I plan my next move. A brief stop by the whelks takes me to Alaskan King Crabs, and Maine lobsters piled high on ice. Perfectly steamed, the meat is briny, slightly buttery and melt-in-your-mouth. The natural sweetness enhanced by the steaming. I skip the cutlery and eat the shellfish as it is meant to be eaten: with my hands. A thoughtful server places a cold towel next to my plate to wipe my fingers before I reach for the bubbly. It’s all very decadent, and I have just started.

The tapas bar counter snags my attention with its Jamon Iberico, selection of cold cuts, deviled egg mousse, raw scallops tiradito, and white fish ceviche.

The served-at-your-table mains are equally impressive, with black ink paella with tiger prawns and the grilled Galician octopus ali I pebre being the absolute winners. The lamb rack marinated with port wine sauce, grilled wagyu beef, roasted Canadian lobster baked Thermidor, Hokkaido scallops with truffle-infused pumpkin puree, sautéed chanterelle and Iberico ham are the other standout options. The trolleys offering foie gras terrine, slow-roasted wagyu prime rib, European cheeses with dried fruit, jams, and honey with Sauterne wine add an extra element of luxury to the already lavish brunch.

The desserts are also not to be missed, with the Nitrogen turron ice cream (sweet almond nougat) being a particular highlight. However, the humble churros are not to be overlooked.

The overall experience is truly unforgettable, and the stunning views from the 54th floor of Centara Grand at CentralWorld only add to the enchanting ambience. The service is excellent, and the staff friendly and accommodating.

The brunch at THB 4,555++ per person (including all food, Champagne, and select soft drinks) is value for money considering the sheer quality of the ingredients. There is no skimping here. Even the butter and the bread deserve a separate post. No other brunch in the city even comes close to this exceptional experience.
